1/2 cup Thai glutinous rice
1 1/3 cups coconut milk
1/3 cup dates , pitted and chopped
1/4 teaspoon Himalayan salt
1 teaspoon cornstarch
2 ripe mangoes , sliced
1 teaspoon toasted sesame seeds

Instructions

1.Rinse the sticky rice several times and soak in water for at least 4 hours or overnight.

5.In a small bowl, whisk together the cornstarch and 1 tablespoon of water until smooth. Add this mixture to the rice and stir until well combined and the rice has a sticky consistency. Remove from heat and allow to cool for a few minutes.
6.Serve the mango sticky rice in individual bowls with sliced mangoes on top and sprinkled with toasted sesame seeds.
