1 lime , grated rind and juice of
1 bunch fresh coriander , finely chopped
warm wheat flour tortilla , to serve

Instructions

1.Preheat the oven to 190°C (375°F).
2.Season the flour with salt and pepper, stirring everything together well, and then place the seasoned flour on a plate.
3.Coat the fish fillets on both sides in the seasoned flour.
4.In a frying pan, melt half of the butter and all the vegetable oil over a high heat.
5.When the fats are very hot, cook the fish for 3 minutes on each side, or until the outside is crispy and golden brown. You may need to do this in two batches.
6.While the fish is cooking, toast the sliced almonds in a dry pan until they are lightly browned and then remove them from the heat.
7.Transfer the cooked fish fillets to a baking dish.
8.Sprinkle the almonds over the fish evenly.
9.Add the remaining butter, lime rind and juice, and the chopped coriander to the frying pan.
10.Cook over a high heat for 2 minutes, stirring it all together to make a soft buttery sauce.
11.Pour the sauce over the fish and almonds in the baking dish.
12.Cover gently with foil and bake in the preheated oven for 5–6 minutes, or until the fish is cooked through and tender.
13.Serve with warm wheat flour tortilla.
