Ingredients

3 tablespoons fresh lime juice
3 garlic cloves
2 dried bay leaves
1 1/2 teaspoons dried oregano
3/4 cup olive oil ( or less as desired )
salt and pepper , to taste
4 red snapper fillets
3/4 cup olive oil
7 garlic cloves , divided
2 cups white onions , finely chopped
2 1/4 lbs tomatoes , finely chopped
3/4 cup pimento stuffed olive , finely chopped
1/4 cup capers
6 fresh bay leaves ( or 3 dried )
1 1/2 teaspoons crushed dried oregano
2 sprigs fresh thyme ( or 1 teaspoon dried )
2 sprigs marjoram ( or 1 teaspoon dried )
salt , to taste
1/2 teaspoon fresh ground black pepper
4 ounces guajillo chilies ( from an 8-ounce can )
Red Snapper Veracruzana (Huachinango a La Veracruzana) is a popular fish dish from the state of Veracruz, Mexico which is enjoyed by many for combining fresh, delightful ingredients and flavors. The unique combination of juicy tomatoes, pimento-stuffed olives, briny capers, and spicy peppers provides an unmistakable tang that delights the palate. Traditionally, the red snapper is the preferred fish used but other fish alternatives can be used as well. The dish is commonly served with rice, avocado, salads, and corn tortillas to tone down the spiciness. The most common stress in this dish is the use of the Guajillo chili which gives the dish its heat but possesses unique health benefits.

Instructions

1.In a bowl, mix lime juice, 3 garlic cloves, bay leaves, dried oregano, 3/4 cup olive oil and season with salt and pepper to taste.
2.Marinate red snapper on both sides with above mixture, place in covered dish and refrigerate for 1 hour.
3.Heat a non-stick frying pan over medium heat and cook snapper, cover and turn after about 3-5 minutes, cook for another 3-5 minutes or until it flakes easily.
4.In a skillet, heat remaining olive oil over medium heat, add 4 minced garlic cloves and onions, until onions are translucent.
5.Add oregano, bay leaves, thyme, marjoram, guajillo chilies, tomatoes, salt, pepper, capers, olives and remaining garlic, heat until bubbling for about 10-15 minutes while stirring occasionally.
6.Remove from heat and carefully place the cooked fish on top of the tomato sauce, serve hot.
