Ingredients

10 ancho chilies ( dried poblano )
4 dry Mexican chilies
4 onions , quartered
8 garlic cloves , peeled
2 tablespoons olive oil or 2 tablespoons vegetable oil
1 tablespoon ground cumin
2 -4 2 -4 cups chicken stock or 2 -4 cups vegetable stock
1 can tomato puree or ( 28 ounce ) can crushed tomatoes
2 tablespoons sugar
1/2 - 1 tablespoon salt , please start with the smaller amount , sample and adjust to your taste

Instructions

1.Clean and remove seeds from ancho and Mexican chilies.
2.Toast the chilies in a dry skillet over medium heat until slightly softened and fragrant.
3.Place chilies, onions, garlic, oil, cumin, and one cup of chicken or vegetable stock in a blender or food processor, puree until smooth.
4.Pour blended vegetables into a large pot and add tomato puree or crushed tomatoes, sugar, and salt.
5.Bring to a boil over medium-high heat and reduce heat to medium-low, let simmer for 30-40 minutes, stirring occasionally, until the sauce has thickened.
6.Add additional chicken or vegetable stock if needed to reach desired consistency.
7.Adjust salt to taste.
