Ingredients

1 large red bell pepper , stemmed , seeded , & cut into 1-inch pieces
1/2 cup water
2 garlic cloves , very finely chopped
6 tablespoons unsalted butter , cut into pieces
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 cup all-purpose flour
4 large eggs
1/2 cup freshly grated gruyere cheese or 1/2 cup freshly grated pecorino romano cheese
3 pinches crushed red pepper flakes ( or more , to taste )
Red-Pepper, Garlic & Gruyere Gougeres are a savory French pastry made with pâte à choux dough, flavored with red pepper and garlic, and filled with melted gruyere cheese. Instructions

1.Preheat the oven to 375°F.
2.In a medium saucepan, combine the chopped red bell pepper, water, chopped garlic, butter, salt, and pepper. Cook over medium heat, stirring occasionally, until the butter is melted and the mixture comes to a boil.
3.Add the flour and stir rapidly with a wooden spoon until the mixture comes together and forms a ball.
4.Remove from heat and cool for 2 minutes.
5.Add the eggs one at a time, stirring vigorously until each egg is fully incorporated.
6.Stir in the grated Gruyere cheese and red pepper flakes.
7.Drop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
8.Bake until golden brown and puffed, about 25-30 minutes.
