1 bulb of garlic
1 teaspoon olive oil , divided
2 tablespoons olive oil , divided
2 medium sweet red peppers , halved and seeded
3 tablespoons fresh parsley , minced
2 tablespoons fresh basil , minced
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
12 ounces French baguettes

Instructions

1.Preheat the oven to 375 F (190 C).
2.Brush both sides of each slice of bread with the 1 teaspoon of olive oil and place on a baking sheet.
3.Bake for 8-10 minutes or until bread is lightly browned and crispy.
4.While the bread bakes, brush the red peppers with 2 tablespoons of olive oil.
5.Roast the peppers under the broiler for 10-15 minutes or until the skin has blackened and blistered.
6.Place the peppers in a bowl and cover with a lid or plastic wrap for 10 minutes.
7.Remove the skin and chop the peppers finely.
8.Combine chopped peppers, garlic, parsley, basil, lemon juice, 2 tablespoons of olive oil, salt and pepper in a bowl and mix well.
9.Serve bruschetta on the toasted bread slices.
