Ingredients

1 small zucchini , grated
1/4 cup sweet corn
1 jar roasted red peppers , drained and diced fine , divided in half
1/2 large onion , diced fine
3 cloves garlic , minced
1 lb ground chicken ( or turkey )
1 egg , lightly beaten
breadcrumbs , enough to bind
salt and pepper
2 cans tomato sauce
1 can diced tomatoes
1/2 large onion , diced

1 tablespoon olive oil
1/2 teaspoon sugar ( to cut acidity )
1 lb penne
1/2 cup asiago cheese ( or parmesan if you would like )

Instructions

1.In a mixing bowl combine grated zucchini, sweet corn, onion, garlic, ground chicken, egg, breadcrumbs, salt, and pepper.
2.Form the mixture into small meatballs, roughly the size of a golf ball, preheat a skillet with olive oil and drop the meatballs into the pan once hot.
3.Cook meatballs until browned on all sides, remove them from the pan and set aside.
4.In the same pan, sauté onion, garlic, green pepper, and button mushrooms until softened, add the red pepper flakes, diced roasted red peppers and sugar.
5.Add the tomato sauce and diced tomatoes to the pan, stirring to combine, allow sauce to simmer for approximately 15 minutes.
6.While the sauce is simmering, bring a pot of salted water to boil for the penne, once the penne is cooked, drain and set aside. Serve meatballs on a bed of penne, topped with the sauce and grated cheese.
