Ingredients

1 1/2 lbs courgettes ( zucchini )
3 tablespoons vegetable oil
1/2 teaspoon mustard seeds
1 yellow onion , thinly sliced
3 garlic cloves , crushed
1/4 teaspoon red chili powder
1 teaspoon ground coriander
1 1/2 teaspoons ground cumin
1/2 teaspoon salt
1/4 teaspoon ground turmeric
1 tablespoon tomato paste
1 can diced tomatoes
2/3 cup water
1 tablespoon fresh coriander , chopped ( cilantro )
1 teaspoon garam masala

Instructions

1.Wash the courgettes (zucchini) and cut into 1-inch chunks.
2.Heat the vegetable oil in a pan and add the mustard seeds. Once they start to pop, add the sliced onion and sauté until golden.
3.Add the crushed garlic, red chili powder, ground coriander, ground cumin, salt, and ground turmeric. Stir and cook for a minute.
4.Add the tomato paste, canned diced tomatoes, and water. Bring to a boil and then reduce the heat to low. Simmer for 10 minutes.
5.Add the courgettes (zucchini) and cook for an additional 10-15 minutes or until they are tender but not mushy.
6.Sprinkle with chopped fresh coriander (cilantro) and garam masala. Serve hot with rice or bread.
