Ingredients

2 tablespoons red curry paste
2 tablespoons Greek yogurt
2 teaspoons red chili sauce ( sriracha )
4 chicken breasts
2 teaspoons salt
1 teaspoon pepper
1 tablespoon extra virgin olive oil
2 tablespoons shallots , diced
2 teaspoons garlic , minced
2 cups jasmine rice
2 1/2 cups chicken stock
1 tablespoon curry powder
1 tablespoon turmeric
2 tablespoons salt
1 tablespoon pepper
1 tablespoon flat leaf parsley , finely chopped
2 tablespoons Greek yogurt
1 teaspoon fresh ginger , finely diced

Instructions

1.In a small bowl, whisk together the red curry paste, Greek yogurt, and red chili sauce.
2.Season the chicken breasts with salt and pepper.
3.Heat a large skillet over medium-high heat and add olive oil.
4.Once heated through, add chicken and cook until browned on both sides.
5.Add in the shallots and garlic, cooking until softened.
6.Pour in the curry-yogurt mixture and let it simmer for 10 minutes or until the chicken is cooked through.
7.In a separate pot, add jasmine rice and chicken stock and bring it to boil.
8.Add curry powder, turmeric, salt, pepper and ginger then let the mixture simmer on medium heat for 20-25 minutes. Stir frequently to avoid sticking.
9.Once cooked, stir in chopped flat leaf parsley and Greek yogurt.
10.Serve the red curry chicken with the ‘faux saffron’ rice on the side. Enjoy!
