Red-Cooked Pork is a popular dish in East Asian cuisine, with many variations depending on the region. The name 'red-cooked' refers to the technique of slowly braising the meat in soy sauce, sugar, and spices, resulting in a deep red color and rich flavor. This version of the dish features pork chops, a staple protein in many cuisines, marinated in a mixture of brown sugar, hoisin sauce, soy sauce, Worcestershire sauce, sesame oil, five-spice powder, ginger, and garlic. A delicious and easy-to-make authentic dish that can introduce you to the bold flavors of East Asian cuisine.

Instructions

1.In a bowl, combine brown sugar, hoisin sauce, soy sauce, Worcestershire sauce, sesame oil, five-spice powder, ginger, and garlic until well mixed.
2.Place pork chops into a resealable plastic bag and add the marinade. Toss to coat the chops and refrigerate for at least 2 hours or overnight.
3.Preheat the oven to 400°F (200°C).
4.Remove the pork chops from the marinade and transfer them to a baking dish. Reserve the marinade.
5.Bake the pork chops in the preheated oven for 25-30 minutes, or until the internal temperature has reached 145°F (63°C) and is no longer pink.
6.While the pork chops are baking, pour the marinade into a saucepan and bring it to a boil over medium-high heat. Reduce the heat and let it simmer for about 5 minutes, or until it thickens into a syrupy consistency.
7.Brush the reduced marinade over the pork chops before serving.

PROS

The pork chops are tender with a sweet and savory flavor, and the marinade is easy to prepare.

This dish is inspired by traditional East Asian red-cooked dishes, bringing delicious flavors from a different part of the world.

CONS

The dish may require some planning ahead for marinating the pork chops.

Also, because of the sugar in the marinade, it may cause the pork to cook faster and caramelize, making it difficult to determine when it’s fully cooked.

HEALTH & BENEFITS

Pork is an excellent source of high-quality protein, as well as essential vitamins and minerals, such as Thiamine, Phosphorus, Zinc, and Selenium.
Studies also suggest that moderate consumption of pork may help with weight loss and maintaining muscle mass due to its high protein content.
The ginger and garlic in the marinade have antibacterial and anti-inflammatory properties, which can boost the immune system and support overall health.
