Ingredients

15 large dried chilies ( such as Anaheim , New Mexico , California , or pasilla )
4 -5 garlic cloves
2 teaspoons ground cumin
1 teaspoon salt
2 teaspoons all-purpose flour
2 teaspoons olive oil or 2 teaspoons melted shortening
This homemade red chili sauce is the perfect addition to traditional tamales, enchiladas, tacos, and more. Made with a blend of dried chilies, garlic, and spices, it has a deep, rich flavor and just the right amount of kick. Unlike store-bought varieties, this sauce is free of preservatives and additives, making it a much healthier option for those watching their diet.

Instructions

1.Begin by removing the stems and seeds from the dried chilies, and rinse them under cold water to remove any dirt or debris.
2.Fill a large pot with water and bring it to a boil, then add the rinsed chilies to the pot.
3.Allow the chilies to cook for 10-15 minutes, or until they have softened and plumped up.
4.Once the chilies are cooked, use a slotted spoon to transfer them to a blender or food processor.
5.Add the garlic, cumin, salt, flour, and olive oil or melted shortening to the blender, then blend everything until it forms a smooth paste.
6.If the sauce appears too thick, add a little bit of the chili cooking water to thin it out.
7.Once the sauce has reached your desired consistency, transfer it to a jar or container and store it in the refrigerator until ready to use.
