Ingredients

2 ancho chilies
3 tablespoons vegetable oil
1 large red onion , finely chopped
3 garlic cloves , finely chopped
1 tablespoon ground cumin
1 tablespoon dried Mexican oregano
1 cup dry white wine
1 can plum tomatoes , pureed
2 cups chicken stock ( or vegetable stock )
salt & freshly ground black pepper

Instructions

1.Roast the ancho chilies on a hot, dry pan until they become fragrant. Remove from the pan and leave to cool, then remove the stem and seeds and tear into small pieces.

3.Add the garlic, cumin, and oregano and cook for 1-2 minutes more.
4.Add the wine and let it reduce until almost evaporated.
5.Add the tomatoes, chicken stock, and chilies; bring to a boil, then reduce the heat and simmer for 30 minutes or until the sauce has thickened.
6.Season with salt and pepper to taste and let it cool down before using.
