12 red capsicums , large
1 tablespoon salt
660 g sugar
375 ml white wine vinegar

Instructions

1.Cut the capsicums to remove the core and seeds, then chop them into small pieces.
2.Place the chopped capsicums in a large bowl, add salt and stir to combine. Cover and leave to stand overnight.
3.The next day, transfer the capsicum mixture to a large pot, add sugar and white wine vinegar. Stir well to dissolve the sugar.
4.Place the pot over medium-high heat, stirring occasionally, bring the mixture to a rolling boil for 20-25 minutes or until the liquid slightly evaporates and the mixture has a jam-like consistency.
5.Once done, remove the pot from the heat and let it rest for 5-10 minutes.
6.Using an immersion blender, puree the mixture until it is smooth and has no lumps.
7.And your Red Capsicum Marmalade is ready to serve, or if you want to store it for later, pour it into sterilized jars, then seal and store in the refrigerator.
