Ingredients

200 g millet
600 ml vegetable broth
2 small onions
2 eggs
80 g low-fat Quark cheese ( substitute cottage cheese )
salt
pepper , freshly ground
1 kg red cabbage
1 small acidic apple ( i.e . Boskop )
1 tablespoon clarified butter
1 pinch clove powder
100 g fine mushroom camembert cheese ( can substitute with Cream Cheese and sauteed mushrooms )
100 g heavy cream
100 ml milk
nutmeg , freshly grated
fat , for the casserole form
Red Cabbage Millet Gratin is a German vegetarian dish that is unique and delicious It combines millet, onion, apple, red cabbage, and cheese in a creamy gratin that is hearty and satisfying It is perfect for a cozy dinner at home, especially during the winter months when comfort food is a must-have The dish is also very customizable and can be adapted to different tastes by adding more or less cheese or swapping out the vegetables

Instructions

1.Rinse millet and cook covered with vegetable broth for about 20 minutes
2.Dice onions, beat eggs and grate low-fat Quark cheese
3.Remove the stalk and outer leaves from the red cabbage, cut into thin strips, and cook with the diced onions in clarified butter
4.Add apple and procced cooking for another 5 minutes
5.Season with salt, pepper, and clove powder
6.Preheat oven to 400°F, grease casserole dish
7.Stir mushroom camembert cheese, heavy cream, milk, and nutmeg into millet and fill into casserole dish
8.Spread red cabbage mixture on top
9.Bake in the oven for 25-30 minutes

PROS

This dish is vegetarian and rich in protein and fiber thanks to the millet and cheese
It is also great for meal prep as it can be reheated easily

CONS

The dish takes some time to prepare and needs to bake for over 20 minutes
It can also be quite heavy due to the cheese and cream
