4 ounces white onions , finely chopped
2 cups red beet juice
1 bunch red beet , tops finely chopped
4 cloves garlic , thinly sliced
4 cups vegetable stock
4 ounces white wine
4 ounces butter
1 tablespoon vegetable oil
4 tablespoons grated parmigiano

Instructions

6.Once almost all of the vegetable stock has been used and the rice is cooked al dente, add the warm beet juice to the rice.
7.Stir and continue cooking the risotto until the beet juice is fully absorbed and the rice is fully cooked.
8.Add in the butter and grated parmigiano and stir until they are melted and well-incorporated.
9.Season with salt and pepper to taste.
