Ingredients

450 g prawns ( shrimp uncooked 1lb )
1 pinch salt
1/2 egg white
1 tablespoon cornflour ( cornstarch mix with water to make paste )
175 g snow peas
575 ml vegetable oil ( about - 1 pint 21/2 cups )
1/2 teaspoon salt
1 teaspoon light brown sugar
1 tablespoon spring onion ( finely chopped )
1 teaspoon ginger ( finely chopped )
1 tablespoon light soy sauce
1 tablespoon dry sherry ( or Chinese rice wine )
1 teaspoon chili bean sauce
1 tablespoon tomato puree ( paste )
Red and White Prawns (Shrimp) With Green Vegetables (Yuan Yang X) is a scrumptious seafood dish originating from Southern China's Guangdong province. Instructions

1.Wash the prawns and remove the shells, leaving only the tails intact.
2.Devein the prawns by cutting a small slit down the back and removing the black vein.
3.Marinate the prawns with salt and egg white for 15 minutes.
4.Coat the prawns with cornflour paste, spreading it evenly.
5.Heat the oil in a wok over high heat.
6.Fry the prawns until they turn golden brown, then dish them out and drain the oil.
7.Pour the oil out of the wok, leaving only a small amount in the bottom.
8.Add in the snow peas, salt, sugar, spring onion, ginger, and stir fry for 30 seconds.
9.Add the prawns back into the wok, and stir-fry for another 30 seconds.
10.Add the light soy sauce, sherry, chili bean sauce, and tomato paste.
11.Stir-fry the prawns with the sauce for another 1-2 minutes.
12.Serve hot with steamed rice.
