Ingredients

1/2 kg cottage cheese ( paneer )
7 -8 baby corn
2 medium onions
2 medium tomatoes
10 -12 red chilies ( whole )
8 -10 cloves garlic
1 inch ginger
1 teaspoon cumin seed
7 -8 cloves
1 teaspoon mustard seeds
1 inch cinnamon stick
1/2 cup malt vinegar
2 tablespoons oil
3/4 cup tomato puree , fresh
2 tablespoons sugar

Balchao is a spicy Goan-Portuguese curry that is traditionally made with fish or shrimp. This recipe, however, is a vegetarian take on the traditional dish, using paneer and baby corn. Instructions

1.Start by blending the red chilies, garlic, ginger, cloves, and cinnamon stick together into a fine paste.
2.Heat up the oil in a pan over medium heat and add in the cumin seed and mustard seeds. Cook for a minute till it crackles.
3.Add the sliced onions and cook till they turn golden brown.
4.Add the blended paste and cook for 5 minutes till the oil starts separating from the mixture.
5.Add the fresh tomato puree, salt, sugar, and malt vinegar. Mix well.
6.Add the sliced baby corn and paneer (cottage cheese) cubes and cook for 10 minutes until the vegetables and cheese have absorbed the flavors of the curry.
7.Serve hot with rice or roti.
