Instructions

1.Preheat your oven to 400°F/200°C.
2.Take the baked pie shells and set them aside
3.In a saucepan, combine the frozen strawberries, lemon juice, and water over medium heat. Cook the mixture for 10-15 mins, stirring occasionally until the berries have broken down into a sauce-like consistency.
4.4. Add sugar to the saucepan and bring the mixture to a boil.
5.5. Remove the mixture from the heat then add salt and unflavored gelatin, stirring until all contents are dissolved
6.Add the fresh sliced strawberries to the mixture and stir until combined.
7.Pour the cooked strawberry mixture into the baked pie shell, and refrigerate until set, about 4 hours, or overnight.
8.Make the French cream topping by whipping together cream cheese, sugar, and vanilla extract. Gradually add the heavy cream while continuously whisking until stiff peaks form.
9.Spread the French cream topping over the chilled strawberry pie, ensuring it covers the top of the pie.
10.Serve chilled with garnished strawberries
