Real Lancashire Hotpot is a hearty and filling dish that originated in northern England. Traditionally made with lamb or mutton, this dish is a staple of British cuisine. The dish is named after the clay pot it is cooked in - a 'hotpot'. Made with layers of lamb, vegetables, and sliced potatoes, this dish is perfect for a comforting dinner on a cold night.

Instructions

.Preheat the oven to 350°F.
.Cut the lamb into small cubes and slice the lamb kidney, onions, carrot, turnip, and potatoes.
.Heat oil in a large pot over medium-high heat. Add the lamb and cook until browned. Remove from the pot and set aside.
.In the same pot, add the onions, carrot, and turnip. Cook until they are tender and lightly caramelized.
.Add the flour and stir until combined. Gradually pour in the water, stirring constantly. Crumble in the stock cube, add herbs, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 5 minutes.
.Grease a casserole dish with butter. Layer the sliced potatoes on the bottom of the dish. Add a layer of lamb, then the onion, carrot, and turnip mixture. Repeat layers until the ingredients are used up, ending with a layer of potatoes.
.Pour the stock mixture over the top of the dish.
.Cover the dish with aluminum foil and bake in the preheated oven for 2 to 2 1/2 hours.
.Remove the foil and increase the oven temperature to 400°F. Bake for an additional 30 minutes or until the top is golden-brown and crispy.
