Instructions

1.In a large bowl, dissolve yeast in warm water. Add the olive oil, sugar, salt and 1-1/2 cups flour; beat until smooth.
2.Stir in enough remaining flour to form a soft dough.
3.Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
4.Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
5.Punch dough down; divide into 6 pieces. Roll each into a 7-in. circle.
6.On half of each circle, layer the ricotta cheese, Cheddar cheese, pepperoni, mushrooms and basil.
7.Fold dough over filling and press edges to seal.
8.Place on greased baking sheets. Brush with egg.
9.Bake at 375° for 18-20 minutes or until golden brown.
