Ingredients

2 cups yellow split peas
5 cups water
2 small carrots , grated
1 small onion , chopped
2 2 tablespoons other light tasting oil or 2 tablespoons butter
1 1/2 cups soymilk or 1 1/2 cups cows milk
salt and pepper , to taste

Instructions

1.Rinse the split peas, then soak in water overnight.
2.Rinse and drain the split peas.

4.Add grated carrots to the pot and cook for 2-3 minutes, stirring occasionally.
5.Add the soaked split peas, water, salt, and pepper. Bring the soup to a boil, then reduce heat.
6.Simmer the soup for 1-2 hours, stirring occasionally, until the peas are tender.
7.Puree the soup in batches until smooth in texture.
8.Return the pureed soup to the pot, add soymilk or cows milk, and continue cooking for 5-10 minutes. Adjust seasoning to taste.
