Ingredients

6 oranges ( about 1 kilo )
1 1/2 cups caster sugar
2 1/2 cups water
caster sugar , extra
Candied orange peels are made by boiling thick orange peels and then simmering them in a sugar syrup. This delicious treat can be enjoyed as a snack or used creatively in many desserts. Instructions

1.Cut off both ends of the orange and score through the skin of the fruit into quarters. Remove the peel, trying to leave as little pith on the actual peel as possible, and then cut the peel into strips.
2.Take a pot, fill it with 2 1/2 cups of water, bring it to a boil, and put the orange peels in for 5 minutes.
3.Drain the water and rinse the peels with cold water. Do this step two more times.
4.In a pot, add 2 1/2 cups of water and 1 1/2 cups of the caster sugar. Add orange peels in and let them simmer on medium for 30 to 45 minutes until they become translucent.
5.Remove the peels from the syrup and dust them with the extra caster sugar.
6.Let them dry out before serving. Store in an airtight container, in a cool, dry place.
