Ravioli Caprese is a classic Italian dish that combines the flavors of Caprese salad with tender, homemade ravioli. The filling in this recipe is a mixture of ricotta cheese, rotisserie chicken, parmesan cheese, and fresh basil. The ravioli is then dressed with a zesty combination of extra-virgin olive oil, basil leaves, lemon zest, salt, and black pepper. This dish is perfect for a cozy Italian dinner with family and friends, and pairs well with a chilled glass of white wine.

Instructions

1.In a large bowl, mix together the flour, hot water, and a pinch of salt, stirring until a dough forms. Knead the dough on a floured surface for 10-15 minutes until smooth and elastic.
2.In a separate bowl, mix together the ricotta, egg, rotisserie chicken, parmesan cheese, chopped basil, salt, and black pepper until well combined.
3.Roll out the dough into thin sheets, cutting them into 2-inch squares. Place a tablespoon of the filling on each square, folding them over and pressing the edges to seal.
4.In a large pot of simmering water, cook the ravioli for 3-4 minutes until they float to the surface. Drain and set aside.
5.In a small saucepan, whisk together the olive oil, basil leaves, lemon zest, salt, and black pepper. Drizzle over the ravioli and serve immediately.
