Instructions

1.Preheat the oven to 180°C. Grease a 9x13 inch baking dish.

3.Add the butter and continue to mix until fully combined.
4.Sift in the semolina, flour, and baking powder, then add the cinnamon and orange rind. Mix well.
5.In a separate bowl, beat the egg whites until stiff peaks form.
6.Gently fold the egg whites into the batter.
7.Pour the mixture into the prepared baking dish and bake for 30-40 minutes or until golden brown and a toothpick inserted into the center comes out clean.
8.While the cake is baking, make the syrup. In a saucepan, bring the water, sugar, lemon juice, and orange rind to a boil. Reduce heat and simmer for 10 minutes or until the syrup has thickened.
9.Pour the syrup over the hot cake. Allow to cool completely before slicing and serving.
