5 red peppers
2 ounces whole grain rice
1 onion , chopped
1 zucchini , finely diced
7 ounces chopped tomatoes
2 1/2 ounces whole wheat breadcrumbs

Instructions

1.Preheat the oven to 375°F.
2.Cut off the top of each red pepper and remove the seeds and white membrane. Set aside.

5.Add the diced zucchini and sauté for another 2-3 minutes.
6.Add the chopped tomatoes and cook for another 5 minutes, stirring occasionally.

9.Bake the peppers for 25-30 minutes
