Ingredients

6 tablespoons olive oil or 6 tablespoons vegetable oil
1/2 cup roma tomato , coarsely chopped
1/2 cup onion , coarsely chopped
1 cup eggplant , chopped 1/2-inch pcs
1/2 cup red bell pepper , chopped 1/2-inch pcs
1/2 cup yellow bell pepper , chopped 1/2-inch pcs
1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried rosemary , crushed
1 teaspoon finely chopped fresh garlic
1/4 teaspoon salt
1/4 teaspoon freshly ground coarse black pepper
1/2 cup freshly grated parmesan cheese
herbed French bread or plain French bread
Ratatouille Stuffed Herb Bread is a delicious and creative way of consuming vegetables. While Ratatouille is a traditional French dish, we've combined it with French Bread to make a whole new level of food experience. The vegetables are cooked with fresh herbs and spices, which are both nutritious and aromatic. The loaf in this recipe is completely hollowed out and refilled with ratatouille mixture, a great way to add more nutrition and taste to your diet! This dish is perfect for a dinner party and can be stored in the refrigerator for a few days, in case you have any leftovers.

Instructions

1.Preheat the oven to 375°F.
2.Heat olive oil in a large frying pan over medium heat.
3.Add onions and sauté until soft and translucent, about 5 minutes.
4.Add chopped eggplant, red bell and yellow bell peppers, sauté for 10 minutes.
5.Add tomatoes, garlic, rosemary, salt, and freshly ground black pepper.
6.Cover frying pan and cook for 10 minutes, stirring occasionally.
7.Remove from heat and stir in grated parmesan cheese.
8.Cut the top off of French bread and scoop out insides using a sharp knife.
9.Fill the hollowed loaf with ratatouille mixture.
10.Replace the bread top on loaf and wrap it with foil.
11.Bake for 20-25 minutes in the preheated oven.
12.Place it out, remove the foil, slice and serve immediately.
