Ingredients

250 g lean ground beef
2 tablespoons dried breadcrumbs
1 teaspoon chopped fresh basil

1 small onion , finely diced
1 small eggplant , cut into 1/2 in dice
1 small zucchini , cut into 1/2 in dice
1 medium green bell pepper , diced
1 small red onion , diced
1 can tomatoes , chopped and juice included
1 teaspoon mixed Italian herbs
1 tablespoon chopped fresh basil
2 garlic cloves , finely chopped
2 teaspoons olive oil
salt and pepper
1 tablespoon basil , extra
juice of half a lemon

Instructions

1.Preheat oven to 375F/190C.
2.In a bowl, combine the ground beef, breadcrumbs, basil, oregano, salt and pepper. Mix until well combined.
3.Using a small cookie scooper, form the meatballs and place them on a baking sheet lined with parchment paper.
4.Bake in the oven for 15 minutes.
5.While the meatballs are baking, heat the olive oil in a large saucepan over medium heat.
6.Add the onion, eggplant, zucchini, green bell pepper, red onion, garlic, salt, and pepper to the saucepan. Cook for 5-8 minutes, stirring occasionally, until the vegetables begin to soften.
7.Add the chopped tomatoes, mixed Italian herbs, and basil. Cook for an additional 5 minutes.
8.Remove the meatballs from the oven and add them to the saucepan with the vegetables. Coat the meatballs with the sauce and cook for an additional 5 minutes.
9.Squeeze the lemon juice over the top and serve hot.
