Ingredients

1 large eggplant , peeled and cut into 1 inch cubes
salt
2 medium onions , chopped
2 cups chopped fresh tomatoes ( about 3 medium )
1 large green bell pepper , cut into 1/2 inch squares
1 large red bell peppers or 1 large yellow bell pepper , cut into 1/2 inch squares
3 medium zucchini , sliced
3 tablespoons olive oil
3 tablespoons dried basil
2 garlic cloves , crushed through a press
1/2 teaspoon fresh ground pepper
1 can tomato paste
1 can pitted ripe olives , drained and chopped coarsely
3 tablespoons chopped fresh basil
Ratatouille originated in France and is now a popular dish across the Mediterranean region. Often served as a side dish, the slow-cooked dish is a combination of eggplant, onions, peppers, zucchini, and tomatoes. It's a great vegetarian/vegan option as it's filling, loaded with flavor, and of course, healthy. The Crock Pot version is perfect for busy days as it allows you to prep everything ahead of time and come back to a hot, ready-to-eat meal.

Instructions

1.In a colander, toss eggplant with salt and let stand for 30 minutes. Then rinse and pat dry.
2.In the slow cooker, combine eggplant, onions, chopped tomatoes, green and red bell peppers, zucchini, olive oil, dried basil, garlic, pepper, and tomato paste.
3.Stir to combine and cook on low for 8-10 hours or high for 4-6 hours.
4.In the last 30 minutes of cooking, add in the chopped olives and fresh basil.
5.Serve over rice, pasta or with crusty bread.
