Ingredients

1 onion
1 red bell pepper
1 yellow bell pepper
1 zucchini
1 yellow squash
4 garlic cloves
1 can crushed tomatoes
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
2 Tbsp olive oil

Instructions

1.Preheat oven to 375°F.
2.Thinly slice the onion, bell peppers, zucchini and yellow squash.
3.Mince the garlic cloves.
4.Using a large baking dish, spread the crushed tomatoes on the bottom.
5.Arrange the sliced vegetables in a pattern on top of the tomatoes.
6.Drizzle olive oil on top of the vegetables.
7.Sprinkle thyme, oregano, salt, and pepper over the vegetables.
8.Cover the dish with aluminum foil and bake for 45-60 minutes or until the vegetables are tender.
