Ingredients

1 1/4 cups flour
1/2 cup butter ( real butter no substitutes )
1/2 cup sugar
1/2 cup raspberry jam ( your choice of seeds or not )
1/3 cup brown sugar , firmly packed
2 eggs
1 teaspoon vanilla
3 tablespoons flour
1/8 teaspoon salt
1 cup chopped walnuts

Instructions

1.Preheat your oven to 350°F (175°C).
2.In a medium bowl, mix together 1 1/4 cups flour, 1/2 cup softened butter, and 1/2 cup sugar until well combined to make the shortbread crust.
3.Press the mixture evenly into an 8x8 inch baking dish lined with parchment paper.
4.Bake for 20-25 minutes, or until the edges are lightly golden.
5.In another bowl, whisk together 2 eggs, 1 tsp vanilla, 3 tbsp flour, and 1/8 tsp salt until smooth.
6.Add 1/2 cup raspberry jam and 1/3 cup firmly packed brown sugar and stir well.
7.Pour the mixture over the baked crust.
8.Sprinkle the chopped walnuts on top.
9.Bake for an additional 20-25 minutes or until the filling is set and the nuts are toasted.
