2 tablespoons white sugar , or to taste - divided
Raspberry Vatrushka Buns are a traditional Russian dessert that is often enjoyed with coffee or tea. These buns are a sweet and delicious treat that make use of fresh raspberries. Instructions

1.In a small bowl, mix together the yeast, warm milk, and all-purpose flour. Cover and leave for 10 minutes, or until the mixture becomes frothy.
2.In a large bowl, mix together the castor sugar, sifted all-purpose flour, salt, warm milk, butter, and egg yolk. Knead well to form a smooth dough and leave it to rest for 30 minutes.
3.Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
4.Divide the dough into 10 equal parts and shape them into smooth balls. Place these on the baking tray, leaving space between them.
5.Make an indentation in the center of each ball with your thumb. Fill each indentation with 1/4 cup fresh raspberries and sprinkle with white sugar.
6.Brush the buns with beaten egg white and sprinkle with the remaining sugar.
7.Bake for approximately 30 minutes, or until golden brown. Leave to cool and sprinkle with powdered sugar before serving.
