Ingredients

30 g sliced almonds
1 cup milk
75 g caster sugar
3 egg yolks
25 g flour
250 ml cream
2 tablespoons plum brandy ( slivovitch )
500 g raspberries
3 tablespoons caster sugar
1 tablespoon butter

Instructions

1.Preheat the oven to 180°C (160°C fan) gas mark 4.
2.Place the almonds on a baking tray and toast them for 4-5 minutes, or until golden brown.
3.In a saucepan, bring the milk to the boil.
4.In separate bowl, vigorously whisk together the egg yolks, caster sugar, and flour.
5.Slowly add the hot milk to the egg mixture, whisking continuously.
6.Pour the mixture back into the saucepan and cook over medium heat, whisking constantly, until the mixture thickens.
7.Remove from heat and add the cream and plum brandy.
8.Grease a 20cm (8in) round cake tin with butter.
9.Place the raspberries at the bottom of the tin, gently pressing them in.
10.Pour the custard mixture on top of the raspberries.
11.Sprinkle caster sugar over the top and dot with butter.
12.Bake in the oven for 35-40 minutes, or until the top is golden brown and the custard has set.
13.Allow to cool before serving.
