Ingredients

3 cups milk
1 cup cream
1/2 cup caster sugar
2 teaspoons vanilla essence
10 slices white bread
60 g butter , softened
1 cup frozen raspberries
5 eggs
1/3 cup sliced almonds
1 tablespoon confectioners ' sugar
Raspberry Bread & Butter Pudding is a classic British dessert often served during the cooler months. Typically made by layering buttered bread and fruit, then pouring over a custard-like mixture made with eggs, cream, and milk before baking, it's a comforting and satisfying sweet dish. Instructions

1.Preheat oven to 160°C fan-forced.
2.Grease a 2-litre capacity shallow baking dish.
3.Combine milk, cream, sugar and vanilla essence in a large saucepan over medium heat. Cook, stirring, for 5 minutes or until sugar dissolves. Set aside to cool.
4.Spread each slice of bread with butter. Cut slices into 4 triangles.
5.Arrange 1/3 of the bread triangles, slightly overlapping, over the base of prepared dish.
6.Top with 1/3 of the raspberries. Repeat layering with remaining bread triangles and raspberries, finishing with a layer of raspberries.
7.Whisk eggs in a large jug. Add milk mixture. Whisk to combine. Pour over bread mixture. Set aside for 10 minutes.
8.Sprinkle with sliced almonds.
9.Bake for 1 hour or until golden and set. Stand for 15 minutes.
10.Sprinkle with confectioners' sugar. Serve warm.
