Ingredients

14 tablespoons unsalted butter
300 ml powdered sugar
1 teaspoon vanilla sugar ( not liquid )
600 ml all-purpose flour
1 egg
150 ml raspberry jam
400 ml powdered sugar
2 tablespoons egg whites
4 tablespoons candy sprinkles ( optional )
These Raspberry Bars, also known as Hindbær Snitter in Danish, are a traditional Scandinavian dessert that are often enjoyed with a cup of coffee or tea. The shortbread crust is made with plenty of butter for a deliciously rich flavor and texture. Raspberry jam provides a sweet and tangy layer, while the vanilla glaze adds a finishing touch of sweetness. These bars are perfect for entertaining or as a sweet treat any time of day.

Instructions

1.Preheat the oven to 350°F (175°C).
2.In a large bowl, cream together the butter, powdered sugar, and vanilla sugar until light and fluffy.
3.Gradually mix in the flour and egg until a dough forms.
4.Press the dough into the bottom of a greased 9x13 inch baking dish.
5.Spread the raspberry jam evenly over the top of the dough.
6.In another bowl, whisk together the powdered sugar and egg whites until smooth.
7.Drizzle the glaze over the raspberry layer.
8.Top with candy sprinkles if desired.
9.Bake for 20-25 minutes, or until the edges are golden.
10.Allow to cool before cutting into bars.
