Ingredients

12 waffles ( our waffles are the size of a piece of bread )
300 g raspberries , fresh or frozen
200 g white chocolate , chopped
1/4 cup caster sugar
1 tablespoon plain flour
3 eggs
1 teaspoon grated fresh lemon rind
1 teaspoon vanilla extract
500 ml thickened cream
2 tablespoons icing sugar , to dust
We are excited to share the recipe of the Raspberry and White Chocolate Waffle Pudding, a mouth-watering and tempting dessert which is great for any occasion. This dessert looks gorgeous and fantastic, the perfect end to a meal. A delicious combination of white chocolate and raspberries, which are layered with crispy waffles and topped off with a dollop of thickened cream, it smells and tastes great. Instructions

1.Preheat oven to 180°C.
2.Grease a 20cm springform cake tin and line the base with baking paper.
3.Break waffles into 2cm pieces and scatter over the base of the tin.
4.Pour over raspberries and chopped white chocolate.
5.Sugar, flour, eggs, lemon rind, vanilla extract and thickened cream into a large bowl and whisk until well combined.
6.Pour the egg mixture over the waffles and raspberries.
7.Bake for 40-45 minutes or until just set (it will continue to set as it cools).
8.Cool the dessert in the tin.
9.Before serving remove from the tin and dust with icing sugar.
