Ingredients

150 g butter , softened plus extra for greasing
250 g plain flour , plus a little for dusting
1/2 teaspoon bicarbonate of soda
2 teaspoons baking powder
1 pinch salt
275 g caster sugar
2 large eggs , lightly beaten
200 ml plain yogurt
2 lemon zest , only finely grated
250 g mascarpone
150 g lemon curd
400 g fresh raspberries
icing sugar , to dust
This Raspberry and Lemon Layer Cake is a sweet treat perfect for any occasion, from birthdays to afternoon tea with friends. The cake is light and moist, with the refreshing tang of lemon and the sweetness of raspberries. It is easy to make and looks impressive, making it a great option for entertaining guests.

Instructions

1.Preheat the oven to 180°C/160°C Fan/gas mark 4. Grease and line 2 x 20cm round sandwich tins with baking parchment and place to one side.
2.In a large bowl, sift together the flour, bicarbonate of soda, baking powder and salt. Add the caster sugar and mix well.
3.In another bowl, whisk together the softened butter and eggs until light and fluffy. Fold the wet ingredients into the dry ingredients with the plain yogurt and lemon zest, mixing until everything is well combined.
4.Divide the mixture between the two prepared baking tins, spreading the mixture out evenly. Bake in the preheated oven for 25-30 minutes or until golden brown. Leave to cool in the tins for 10 minutes, before turning out onto a wire rack to cool completely.
5.Once the cakes are cool, stir the mascarpone and lemon curd together in a bowl until well combined.
6.Place one of the sponge cakes onto a serving plate and spread half the lemon curd mix over the top. Scatter with half the raspberries.
7.Top with the second sponge cake and spread the remaining lemon curd mix over the top. Add the remaining raspberries.
8.Dust the top of the cake with icing sugar.

This cake is high in sugar and not suitable for those following a low-carb diet.
