Ingredients

1 cup butter , softened
1 package cream cheese , softened
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
3/4 cup white sugar
1 cup walnuts , chopped
3/4 cup dried apricot , chopped ( I prefer Blenheim variety but Turkish work fine too )
1/4 cup brown sugar , packed
1 1/2 teaspoons ground cinnamon
1/2 cup seedless raspberry preserves ( ideally no seeds but it does n't really matter )
1 tablespoon milk

Instructions

1.In a large bowl, cream the butter, cream cheese, vanilla, and salt until smooth.
2.Gradually add flour and mix until a soft dough forms; divide into three portions and shape each into a flat disc.
3.Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
4.In a food processor, combine walnuts, dried apricots, brown sugar, and cinnamon; pulse until finely chopped.
5.Preheat oven to 350°F (177°C) and place parchment paper on baking sheets.
6.On a floured surface, roll out one portion of dough into a 9-in (23-cm) circle, spread raspberry preserves, and sprinkle with 1/3 of the walnut mixture. Cut into 12 wedges and roll up each wedge from the widest end, tucking in the point. Brush with milk and bake for 20-25 minutes.
7.Repeat with remaining two portions of dough and filling.
8.Allow to cool and serve.
