Ingredients

1 cup fresh raspberries
3 tablespoons brown sugar
1 cup all-purpose flour
1/3 cup white sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup sour cream
2 tablespoons butter , melted
1 teaspoon vanilla extract
1 egg
1/4 cup sliced almonds
1/4 cup sifted confectioners ' sugar
1 teaspoon milk
1/4 teaspoon vanilla extract
This Raspberry Almond Coffeecake combines the sweetness of raspberries and the nuttiness of almonds, which are the ideal combination for a perfect breakfast or sweet snack. Instructions

1.Preheat oven to 375°F. Grease an 8-inch cake pan.
2.In a small bowl, combine raspberries and brown sugar.
3.In a medium bowl, sift the flour, white sugar, baking powder, baking soda, and salt. Add sour cream, melted butter, vanilla extract and egg. Stir until just blended.
4.Spread half of the batter in the prepared pan.
5.Top with the raspberry mixture. Spoon the remaining batter over the berries.
6.Sprinkle sliced almonds over the top of the cake.
7.Bake for 25 minutes or until done.
8.In a bowl, mix confectioners’ sugar, 1 tsp. milk and 1/4 tsp vanilla extract until smooth. Drizzle over the cooled cake.
