Ingredients

1 quart milk
3 tablespoons lemon juice
3 1/2 cups water
1 cup sugar
1 pinch cardamom powder
1 cup sugar syrup ( from the rasgullas )
3 cups milk
1/2 teaspoon cardamom , pwd
2 tablespoons pistachios , sliced
2 pinches saffron , mixed few tbsp milk
Rasgulla and Rasmalai are two popular sweet delicacies from India. Rasgulla is a spongy ball made of chenna, which is essentially curd cheese, while Rasmalai is a flattened patty of condensed milk soaked in sugar syrup. Instructions

1.For Rasgulla:
2.Boil milk in a heavy bottom pan and add lemon juice to it.
3.After a while, the milk will split into curd and whey, turn off the heat when this happens.
4.Strain it through a muslin cloth and rinse it with running water to remove any traces of lemon.
5.Squeeze out all the water from the chenna and knead it until it is smooth.
6.Make small balls of the chenna, ensuring there are no cracks in them.
7.Boil water in a heavy bottomed vessel and add sugar to it.
8.When the sugar has dissolved, add the chenna balls to the water.
9.They will soon puff up and become spongy as they cook. Remove them from the water once they do so.
10.Soak them in sugar syrup and serve.
11.For Rasmalai:
12.Boil milk in a heavy-bottomed pan until thick.
13.Add cardamom powder and stir well.
14.Divide the milk into equal amounts so that you can shape them like patties.
15.Soak these patties in sugar syrup and chill them in the refrigerator for a while.
16.Garnish with saffron and pistachios before serving.
