Ingredients

4 cups whole milk
1 teaspoon lemon juice or 1 teaspoon lime juice
1 1/2 cups sugar
1/2 teaspoon cardamom powder ( Elaichi )
3 cups water , for boiling , may need more ( sugar , to water ratio should be 1-2 )
Rasgula originated from the eastern state of India, West Bengal, and is now famous throughout the country and the world. It is a traditional Indian dessert made with chenna or paneer, which is coagulated milk solids, and is also known as an Indian cheese ball in some parts of the world. Rasgula is a simple and easy recipe that can be made with just a few ingredients and is loved by all. It is a perfect dessert for a family dinner or any social gathering.

Instructions

1.In a large pot, bring the milk to a boil, stirring constantly to prevent burning.
2.Add the lemon juice or lime juice to the milk and stir until the curd forms. Remove from heat and let it sit for 5 minutes.
3.Strain the curdled milk using a cheese cloth and squeeze out as much whey as possible.
4.Knead the paneer until it forms a smooth dough.
5.Make small balls out of the dough and set aside.
6.Mix water, sugar, and cardamom powder in a pressure cooker or large pot.
7.Bring the mixture to a boil and add the balls.
8.Cook the balls for 13 minutes in the pressure cooker or 30 minutes in a pot, covered with a lid.
9.Remove from heat and let it cool to room temperature. Serve chilled.
