1 cup Greek yogurt ( Strained )
1 cup Hidden Valley & reg ; Original Ranch & reg ; Dressing
3 tablespoons olive oil
1 tablespoon vinegar
2 garlic cloves ( Minced )

2 cucumbers , peeled and diced
2 tablespoons feta
2 cups olive oil
2 teaspoons garlic powder
1 teaspoon oregano
1 tablespoon lemon juice

1 1/2 lbs boneless skinless chicken breasts
3 cups spinach
2 cups crumbled pita chips
1 tablespoon feta cheese
1 teaspoon garlic powder
1 teaspoon parmesan cheese

Instructions

1.Preheat the oven to 375°F.
2.In a large mixing bowl, combine the Greek yogurt, Hidden Valley Original Ranch Dressing, olive oil, vinegar, minced garlic, salt, and pepper.
3.Fold in the diced cucumbers, feta cheese, olive oil, garlic powder, oregano, lemon juice, salt, and pepper.
4.Add in the boneless skinless chicken breasts and mix well to coat.
5.In a large casserole dish, layer the spinach evenly on the bottom.
6.Pour the chicken mixture over the top of the spinach and spread it out evenly.
7.Sprinkle the crumbled pita chips over the top of the chicken mixture.
8.Sprinkle the feta cheese and garlic powder over the top of the pita chips.
9.Sprinkle the parmesan cheese over the top of the feta cheese.
10.Cover the casserole dish with aluminum foil.
11.Bake for 45 minutes, or until the chicken is fully cooked and the pita chips are crispy.
12.Remove the aluminum foil and bake for an additional 5 minutes to crisp up the top of the casserole.
