1 medium sized onion , finely chopped
2 bay leaves
1 1/2 teaspoons cayenne powder
1 teaspoon cumin powder
1/2 teaspoon oregano
1 tablespoon garlic , minced
1 tablespoon vegetable oil
salt , to taste
cilantro , minced ( garnish )

Instructions

1.Rinse and soak beans in water overnight or for 6-8 hours.
2.Transfer the soaked beans to a pressure cooker and add 4 cups of water.
3.Add salt, bay leaves, and cayenne pepper to the cooker.
4.Close the lid and put the weight on the cooker. Pressure cook the beans for 15-20 minutes.
5.Let the pressure release naturally and then open the cooker. Discard the bay leaves and separate the beans and the cooking liquid.
6.In a separate pan, heat oil and add chopped onions. Sauté until onions turn translucent.
7.Add garlic and sauté for another minute.
8.Add cumin powder, oregano, and mix well.
9.Add the cooked beans and its liquid to the pan. Mix well and let it simmer on low heat for 10-15 minutes.
