Ingredients

2 cups pumpkin
1 cup potato
1 cup turnip
3 tablespoons ghee
1/8 asafoetida powder ( hing )
1/4 teaspoon mustard seeds
1/4 teaspoon cumin seed
1/4 teaspoon onion seeds ( Nigella or Kalonji )
1/4 teaspoon fenugreek seeds
2 bay leaves
1 teaspoon minced green chili
salt
1 teaspoon coriander powder
1 teaspoon mango powder ( Amchur )
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 - 3/4 cup water , to pressure cook
4 tablespoons chopped coriander leaves
Rajasthani Kumda Aloo Ki Sabzi is a popular vegetable dish from the state of Rajasthan in India. Instructions

1.Peel and chop the pumpkin, potatoes, and turnips into small, bite-sized pieces.
2.Heat the ghee in a pressure cooker and add the asafoetida powder, mustard seeds, cumin seeds, onion seeds, fenugreek seeds, and bay leaves. Fry for a minute until the seeds begin to pop.
3.Add the minced green chili and fry for another minute.
4.Add the chopped vegetables, salt, coriander powder, mango powder, red chili powder, and turmeric powder. Toss well to coat the vegetables with the spices.
5.Add enough water to cover the vegetables and close the pressure cooker. Cook on medium heat for 2-3 whistles, until the vegetables are soft and cooked through.
6.Once the pressure has released, open the cooker and garnish with chopped coriander leaves. Serve hot with rice or bread.
