1 quart salsa , ranchera ( my recipe is recommended # 112466 )
4 -5 poblano peppers or 4 -5 anaheim chilies
1 1/2 - 2 lbs monterey jack cheese , shredded or sliced
lard or vegetable oil
tortilla ( I prefer corn over flour )

Instructions

1.Preheat grill or broiler.
2.Grill or broil peppers until blackened and blistered on all sides, turning often.
3.Place peppers in a paper bag and let steam for 15 minutes.
4.Remove peppers from bag and remove the skin, stem, and seeds.
5.Slice peppers into thin strips.
6.In a large skillet, heat the lard or vegetable oil over medium-high heat.
7.Add the pepper strips to the skillet and sauté for 5-7 minutes until softened.
8.Add the salsa and stir to combine.
9.Add the shredded or sliced cheese and stir until melted and combined.
10.Serve hot with tortillas and your favorite taco toppings.
