Ingredients

3 tablespoons vegetable oil
1 cup onion , thinly sliced
6 poblano chiles
1 cup strong dark beer ( I use porter )
6 ounces medium cheddar , sliced thinly

Instructions

1.Roast the chiles over an open flame or griddle until they blister all over. Place them in a paper or plastic bag to allow them to steam and cool. Once they are cool enough to handle, remove the skin, stems, and seeds.

3.Heat the oil in a heavy skillet over medium heat. Add the onion and sauté until soft and translucent, approximately 5 minutes.

5.Pour in the beer and bring the mixture to a boil. Allow it to boil for a few minutes, until most of the beer has evaporated.
6.Layer the sliced cheese over the top of the chiles.
7.Cover the skillet with a lid and allow the cheese to melt, approximately 2-3 minutes.
8.Remove the skillet from the heat and season with salt to taste. Serve hot.
