Ingredients

95 g raisins
1 cup cold water
115 g butter , at room temperature
100 g caster sugar
100 g brown sugar , firmly packed
1 egg
1/2 teaspoon vanilla essence
1/2 teaspoon ground cinnamon
115 g plain flour
1/2 teaspoon bicarbonate of soda
1/4 teaspoon baking powder
75 g rolled oats
100 g dark chocolate chips
Raisin and Choc-Chip Oat Biscuits - Cookies are a sweet treat that is perfect for a snack or dessert. Instructions

1.Preheat oven to 180C/160C fan-forced and line two baking trays with baking paper.
2.In a small saucepan, combine the raisins and the cold water. Bring to the boil over medium-high heat. Once boiled, set aside to cool.
3.In a large mixing bowl, using an electric beater, cream the butter and both sugars until light and fluffy.
4.Add the egg, vanilla essence, and ground cinnamon and beat until combined.
5.In a separate bowl, mix together the plain flour, bicarbonate of soda, baking powder, and rolled oats until combined.
6.Gradually stir the dry mixture into the creamed mixture until combined.
7.Drain the cooled raisins and add to the mixture, along with the dark chocolate chips. Stir until mixed well.
8.Roll tablespoonfuls of mixture into balls and place them on the baking trays, ensuring to leave enough space for them to expand when cooking.
9.Bake for 12-15 minutes, or until golden brown.
10.Transfer baking trays to wire racks to cool.
