Ingredients

3/4 cup skinless split mung beans , soaked for 3 hours and drained
3/4 cup sugar
1/2 cup red azuki beans , soaked for 4 hours and drained
1 1/2 cups coconut milk
1/4 cup tapioca

This sweet, colorful treat consists of three layers of ingredients- sweetened mung beans, red azuki beans, and coconut milk-infused tapioca pearls. The layers are stacked to create a beautiful and vibrant drink that looks just like a rainbow. Instructions

1.Rinse the mung beans and place them in a pot with 3 cups of water.
2.Bring to a boil and then reduce the heat to simmer for 20 minutes.
3.Add the sugar and stir until dissolved.
4.Rinse the azuki beans and place them in a separate pot with 3 cups of water.
5.Bring to a boil and then reduce the heat to simmer until the beans are tender, for about 30–45 minutes.
6.Drain the beans and set aside.
7.Combine the coconut milk and 1/2 cup of water in a pot and heat over medium heat until hot.
8.Add the tapioca and simmer for 2 minutes.
9.Divide the mung beans, azuki beans, and tapioca evenly between 6 serving glasses.
10.Pour the coconut milk mixture over the beans and serve chilled.
