Ingredients

2 lbs lamb , cut into 4 pieces
1 medium onion , cut into cresent moon pieces
2 tablespoons olive oil
2 cups water
1/2 tablespoon black pepper
1/2 tablespoon ginger
1/2 tablespoon paprika
1 pinch saffron
1 1/2 tablespoons parsley
1 1/2 tablespoons cilantro
salt and pepper
1/2 - 1 cup raisins

Instructions

1.Preheat oven to 350°F.
2.In a large stew pot, heat olive oil over medium-high heat until shimmering.

5.Add 2 cups of water, black pepper, ginger, paprika, saffron, parsley, cilantro, salt, and pepper to the pot. Bring to a boil.
6.Add lamb back into the pot and stir. Reduce heat to low and simmer for 2 hours, stirring occasionally.
7.After 2 hours, add the raisins to the pot and stir. Simmer for an additional 30 minutes.
8.Serve hot with steamed couscous or fluffy rice.
