Ingredients

1 pork shoulder ( bone in @ 4 pounds )
salt
3 tablespoons olive oil
1 medium onion , peeled and cut into large pieces
1 celery rib , cut into large pieces
1 small fennel bulb , trimmed and cut into large pieces
1 quart chicken stock ( or enough to almost cover the pork )
3 sprigs fresh thyme
freshly ground black pepper
4 tablespoons unsalted butter
2 boxes lasagna noodles , broken into 3-inch shards
2 tablespoons fresh lemon juice
2 tablespoons grated parmasan cheese
1 tablespoon chopped parsley

Instructions

1.Preheat oven to 325°F.
2.Season pork shoulder generously with salt.
3.In a large oven-safe Dutch oven over medium-high heat, heat olive oil.
4.Sear pork shoulder until browned on all sides, then remove from the pot.
5.Add onion, celery, and fennel to the pot and stir to coat in the oil.
6.Return the pork shoulder to the pot and add chicken stock until it almost covers the pork.
7.Add the fresh thyme and season with freshly ground black pepper.
8.Cover the pot with a lid and transfer to the preheated oven.
9.Cook for 4-5 hours or until the pork is very tender and falls apart easily.
10.Remove the pot from the oven and take out the pork shoulder.
11.Let the pork cool down a bit before shredding it with a fork.
12.Remove the vegetables from the remaining liquid and discard them.
13.Over medium-high heat, reduce the liquid until thickened.
14.Add butter and lemon juice to the liquid and whisk until the butter is melted.
15.Turn off the heat and return the shredded pork to the liquid, tossing to coat.
16.Serve the ragu over broken lasagna noodles, topped with grated Parmesan cheese and chopped parsley.
