4 garlic cloves , chopped
4 1/2 cups tomatoes , peeled , seeded , and cut in strips
3 sprigs fresh parsley
3 sprigs fresh thyme
1 bay leaf
2 red bell peppers , cut in thin strips
4 cups cooked rigatoni pasta ( made at time of serving )

Instructions

1.Preheat the oven to 350 degrees Fahrenheit.
2.Combine 1/2 teaspoon salt and black pepper, and sprinkle mixture over pork cubes.
3.Heat canola oil in a large Dutch oven over medium-high heat.
4.Add pork cubes to the pot and brown on all sides, then remove and set aside.
5.Whisk flour into the cooking oil and stir until cooked off.
6.Add wine and beef broth to the pot, stirring until smooth and bring to a boil.
7.Return pork to the pot, top with onion, garlic, tomatoes, parsley, thyme, and bay leaf, then pour the olive oil over the top.
8.Cover and place pot in the oven for 2 to 2 1/2 hours, or until pork is tender.
9.Remove from oven and stir in bell peppers, then let sit for 10 minutes to thicken.
10.Serve over rigatoni pasta cooked to your liking.
